Fresh Sardines

Our local fish monger asked for orders for fresh, sardines from California this week. Because the New York Times food section featured a recipe for sweet and sour sardines I ordered some. Incredibly fresh, easily cleaned and very well featured in the recipe by Florence Fabricant. Great with an Albarino

The classic Sarde in Saor is also a good way to eat sardines. There are a million versions, of course, but here are two I like the looks of:

Or you can just grill them and serve with a squeeze of lemon.

You have to like that kind of fish, but they are good, and this is the very short season for them.
