Smoking in a cookie tin?

As in, hot smoking a piece of fish. Just saw this done. Bit of chicken wire or metal cloth folded up on the bottom of the tin, some shaved wood underneath with a few sprigs of herb. Oiled salmon placed on top, lid put back on but not too tight, and then the whole set on a medium burner for about four minutes. Fun thing to try after Christmas if you've got any of those tins sitting about.

Barb Freda gave us a contraption of that general type when she got rid of a bunch of kitchen stuff before moving. I think it was purpose-built rather than re-tooled from a cookie tin, but the concept was very similar. It used wood chips of various varietals :lol: that you could buy from the company, and of course I'm sure you could have made your own.

Bottom line, it was interesting but intense. It made the house really smell smoky, and even a short ride in the tin imparted a strong smoky flavor that went beyond what you'd expect at the hands of a skilled grillmeister. It wasn't awful, but we used it a couple of times and then it went from shelf to yard sale.
