A cook after my own heart. I rolled when she said "... I don't talk like that any more". What?!

My mother who worked in the food industry at times but pretty much full time after her children grew older, always said that God himself couldn't make turkey taste great. :( I realized when I grew older we ate turkey on holidays when I was young because it was cheaper but as soon as we had a few bucks we had prime rib on most holidays. :D

Lou, I had an 8 pound rib eye roast from the grill for my dinner today. It went well with a bottle of 1992 Cake Bread Cab Sauv that looked like it was only 5 years old. still purple at the rim, but tannins were fully resolved. Fruit was all black and included plums, blackberry, and Currants.

Have to agree that turkey is pretty bland.

The wife is rather fond of a nice goose, come the holidays.

Brine the turkey & then give it a good seasoning (inside & out) and it's quite tasty!

All meat is bland until seasoned. Ever eaten a plain piece of pork (no seasoning)?

Try it with an heirloom breed pastured pork, freshly processed from a local farmer. I think the reason our grandparents didn't like seasoned foods was that when food was more natural (oops), they didn't need much seasoning.

Been there, done that - not that impressed. Better meat indeed, but still needs to be prepared rather than just cooked plain IMO.

Yeah, salt and pepper are still good, I'll grant you. Still, it's a far cry from industrial pork injected with slime.

Call me a bore (and I've been called worse) but I like the cheap frozen turkeys. I like the cheap pork chops too. Of course a rib roast is nice when it can be afforded.

I saw pre-brined turkeys this year for the first time, though I found myself wondering what the difference would be, industrially speaking, between "brined" and the merely "injected with natural juices" of old.

I like turkey at the holidays as it brings back fond memories of sitting around the table with my Dad, Grandparents and assorted Aunts and Uncles. Not sure if I really like the turkey but the memories it evokes are very pleasant. The bickering among the assembled about who got the drum sticks was always fun as was my Great Aunt who always got a bit tipsy (drunk?).
Now, I get all my pork from a local processor (slaughterhouse). None of the hogs have been raised in a confinement operation and it shows. Truly fresh pork is not white...it is a very pale pink and has enough fat to enhance the flavor and induce tenderness. A little salt, a little pepper helps, but I can enjoy it without much in the way of seasoning.

Lou, outside of the fact that sometimes BL deserves, and demands to eat out, why would you EVER eat at the French Laundry? Or for that matter Denny's?
