Oysters

by Ed Novak » Thu Nov 17, 2011 5:05 pm

So what's your favorite beverage with oysters? I've heard Champaign, good stout beer, and Sauvignon Blanc. Really can't say any of them did anything for me. On a lark tried a Chardonnay. We were grilling them. Just pop them on the grill, upper level better than close to the fire, and let them open. We lightly grilled some sliced French bread, light spread of butter, and then as the oysters opened poured the broth onto the bread and scooped out the oyster. Put 2-3 oysters on each piece of bread. With the Chardonnay, it was out of this world.

I like Chardonnay or Champagne with oysters, but a muscadet, preferably with a few years on it, makes a wonderful match.

Muscadet it is. But champagne also works.

I'm right there wtih you guys. A steely, unoaked Sauv Blanc is good if there's none of the other two around, but the limestone and crushed seashell notes in the muscadet is the perfect companion.

While Muscadet with oysters is the classic combination, true Chablis is also a great match. Village level or Premier Cru is all that's needed.

Muscadet is my favorite, but I've tried a dry Chenin Blanc (from Long Island, believe it or not), and it was amazing.

Thanks for the input.... looking forward to our next oyster outing. I'm not a big white drinker, yet... so this gives me a few more to try.
