RCP: Marcus Samuelsson's Macaroon Pancakes

I've said I'm not a fan of pancakes, but I could be talked into trying a stack of these! (I love coconut.)



Because of the coconut, these burn pretty quickly, so keep an eye on them while they're in the pan. You will be rewarded with a symphony of texture that you won't find in plain old buttermilk pancakes.



Servings: 4

Ingredients:
1 can coconut milk
2 tablespoons, plus 1/4 cup sugar
1/3 cup all purpose flour
3 cups unsweetened shredded coconut
1/2 teaspoon salt
2 teaspoons baking powder
3 eggs

Directions:
1.In a medium bowl, microwave coconut milk and 2 tablespoons of sugar until hot, about 30-45 seconds.
2.Combine flour, coconut, baking powder and salt in another bowl.
3.Slowly add the coconut milk to the dry ingredients and stir until incorporated.
4.Whisk eggs in another large bowl, then add in the coconut mixture while gently whisking until well-combined.
5.Heat butter over medium-high heat in a large, non-stick pan until hot and foamy, then drop heaping tablespoonfuls for smaller pancakes or 1/4-cup batches for larger pancakes, leaving room between them to spread.
6.They won't bubble like regular pancakes, so check their doneness by gently lifting a corner with a spatula. When they're golden brown, flip over and cook for for another couple of minutes.
7.Serve immediately.

That does sound good. We never eat American-style pancakes at home, although we do appreciate the thinner European crepes, especially when in Europe.

But as it happens this morning we were at a brunch where someone made pancakes and we were forced to eat them out of politeness. They would have been much better with coconut!!

I think I've mentioned my dislike of pancakes here as well, but these sound very interesting. What I like least about standard pancakes is the way they make me feel like I've eaten cinder blocks after I've had a couple. These sound lighter as well as more interesting in terms of flavor.

Sounds like they'd be good with chocolate chips mixed in as well, for that "chocolate coated macaroon" angle. (Or maybe that would be way too much?)

I understand that cinder block feeling Mike....exactly why I cannot eat them. They settle like a rock in my stomach and I feel awful. Wonder why? Bread, hamburger buns, do not do that to me....strange.
