RCP: Apple Cobbler

APPLE COBBLER:

1 Stick unsalted butter
4 C Baking apples peeled, cored, and thinly sliced
1 C Turbinado sugar
1 ½ tsp Cinnamon (separated)
½ C Brown sugar
¼ tsp Nutmeg
¾ C Flour
2 tsp Baking powder
¼ tsp Salt
¾ C Almond Breeze (or milk)

2 ½ Quart soufflé dish

Prepare apples and toss with Turbinado sugar mixed with 1 teaspoon cinnamon. Put butter into dish and set in 350 degree oven until butter melts. Meanwhile whisk together brown sugar, ½ teaspoon of cinnamon and ¼ teaspoon of nutmeg, flour, baking powder, and liquid. Scrape batter into butter without stirring, and then add apples on top without stirring. Bake at 350 degrees for one hour.

Serve with whipped cream or Ice cream.

Hmmm...this looks so good and so, well, obvious for something that's never crossed my path or entered my thoughts as a possibility. Apple cobbler...OF COURSE! I just seem to associate cobblers with berries and peaches. Stupid! So glad you posted, will have to rectify my shortsightedness soon!

To convert this to a recipe for peaches or berries just leave out the cinnamon and nutmeg, and change the brown sugar in the batter to Turbinado. Everythings else stays the same.
