This dressing fascinated me as a kid, but I could not get past the green color, and the fact that it came out of a jar. We had this last night over an arrangement of heirloom tomatoes,and small lemon cucumbers. I adjusted the vinegar ratio to suit our tastes. It called for 3 tablespoons originally.
Green Goddness Dressing
Makes 1 cup
1/2 large avocado, peeled, pitted and chopped
2 Tb. white wine vinegar
2 Tb.water
1/4 cup evoo
1 green onion, chopped
1 tsp anchovy paste (or use chopped kalmata olives if you prefer)
1 clove fresh garlic, chopped
1/4 cup low-fat well shaken buttermilk
1 Tbs. fresh lime juice
1 tsp. honey
1 Tbs. fresh basil, chopped
3 Tbs. fresh cilantro leaves and stems, chopped
1 Tbs. fresh parsley, chopped
Combine all ingredients in a food processor, and puree until smooth. Place in an airtight container and refrigerate until ready to use.
