Karen/NoCA wrote:Today, I made blueberry lemon small loaf cakes for a sick friend. As I was juicing, zesting, I wondered if others feel as I do about the lovely lemon. I use a lot of fresh lemons in my cooking, I adore the taste. If a recipe calls for juice, I also use the zest because It is a waste to throw that beautiful flavor away. When juicing the lemon, the fleshy part comes out along with the juice and sort of clings to the rinding part of the juicer. I scrape that off and throw it into my recipe, as well. Of course, I toss the seeds. So, do any of you use the fleshy part of the lemon and also the zest even if the recipe does not call for it? I don't find any evidence of that fleshy part in my baked goods or in anything I toss it into, it just disappears. I do get a lot of compliments on my baked goods with lemon and I think it is because they are so full of flavor. I also think the large, organic lemons are the sweetest. My lemon tree is full of egg size lemons by the way, this is going to be a good year for them.

And I thought you meant literally 'eat' because I definitely suck out juice from lemons and limes. Although I'm told it's bad for the teeth.
