Competitive Foodies

by Bill Spohn » Wed Jul 13, 2011 1:41 pm

Our own Jenise is involved in two upcoming foodie happenings, the 8th Annual International Terrine Event, and the Second (first international) Rib Off to try and prove that Americans can outcook Canadians when it comes to dry rub BBQ ribs.

In view of the latter, I though some might find this page amusing - oddball BBQs

Paul, as you probably already know, I own a Kamado, and heartily endorse the style of grill. I Won't here go so far as to endorse the Kamado company because of their poor service. The fact that the BGE is available most anywhere it makes it a no brainer for a home bbq. I can load my Kamado with about 8 pounds of charcoal and a couple boston butts and never look at it again until the "it's done whistle" blows after about 18 hours. AFAIK, there is no metal bbq or smoker that can do that. 5 hours on the grill at 250F does wonders for some baby back slabs too, again without looking.

We can do the same thing in our $99 electric water smoker.

Carl,

Your electric water smoker (aka hookah?) also uses charcoal, and even 8 pounds of it? :D

I want to know what electric water is and why Carl wants to smoke it.

Ours is from CharBroil but they don't make it anymore. Google electric water smokers and you will find a few more brands. Home Depot carries a good one. The principle is you have a tall cylintrical tank. On the bottom is the electric heating element around which you put your wood chips or chunks. Next up is a bowl with a gallon of water in it. Above that are two cooking ranks. We have always only used one. It does a great job on ribs or all kinds and sizes, chicken, turkey (a fifteen pounder exactly 5 hours), salmon, and of course Boston butts.

Carl, I didn't know about these. Unfortunately, Canadian Home Depot doesn't seem to go for anything at $99! They do offer one from Weber at $399, however it is a briquet version.

However there is a Bradley electric available at Canadian Tire for 'only' $389. Or the larger 'digital' (digital? I'd give them one digit for pricing this stuff!) at $500 and both require that you buy special Bradley Briquets of wood.

I think I may just resist the temptation to get into smoking. Too bad, though, because it is a flavour that can be integrated nicely into many dishes.

Home Depot USA has a Brinkmann that has interchangable parts with mine, for $70. Even if you had to pay 100% tariff, it's a good deal.
