Frozen Yogurt

by Jo Ann Henderson » Sun Jul 03, 2011 4:39 pm

My son donated a 1-1/2 qt ice cream maker to the household a couple years ago. I didn't use it (for reasons unknown) until a couple months ago. I made French vanilla ice cream, which was good. But the revelation to me was how simple it is to make frozen yogurt. I've made several in the past week. They come together in about 5 minutes and from there it is just the time in the ice cream maker to finish the job. OMG -- this stuff (home made) is really good! Following are some of the reicpes I made. Starting with the chocolate(made last night).

Chocolate Frozen Yogurt.jpg

I replaced half of the evaporated milk with 1 C half and half. It would have benefitted from reducing the sugar to 1/2 C only and/or replacing the semi-sweet chocolate to bittersweet. It was still exceptional nonetheless.

The lemonade frozen yogurt was good just as it was. But, the next time I'm going to make candied lemon peels and add to the mix. It is a perfect palate cleanser.

Over the next two weeks I plan to make the Banana Mango Frozen Yogurt, only I plan to make mine coconut-mango since I'm not crazy about bananas and my husband won't, absolutely won't try the fozen yogurt. I'll do that by replacing the 2% milk with coconut milk. Perhaps I'll add about 1/3 c crushed pineapple and make it Pina Colada Frozen Yogurt. And lastly, Cinnamon Pear Frozen Yogurt. All recipes found on the website under Recipes for Frozen Yogurt.

There's a world of great stuff you can do with ice cream makers. I have a thai basil ice cream from a Ming Tsai recipe that's in the works right now. It'll get finished tomorrow.

If you really want to get into this stuff, I recommend the book Ices, by Liddell and Weir. Great recipes and some good history on different styles of frozen desserts.

Hey, the Cow is great! I'm passing on this one, though. :P

North End Cafe made a straight-up goat-cheese ice cream once, using Capriole's finest. A lot of us liked it, but a distinct minority thought it tasted like baby v*mit. They never made it again.

You people must one day visit the areas heavily populated in Israel and Jordan by the Bedouins who seem to have mastered the art of ice creams and yoghurts based no only on the milk of cows but of goats, sheep and camels. Major flavors are mint-flavored vanilla, pistachio and honeydew melon those being available in Bedouin markets and at food fair sponsored in Tel Aviv, Amaan and (until recently) Damascus.

Good stuff!!!

Camels, I think they can claim a monopoly. :D But some US artisanal producers are making sheep milk and goat milk yogurts. I thought Vermont Buttr & Cheese Co. made a goat yogurt, but I don't see it on their Website now. They do make fine dairy products from cow and goat, though, and happily, make enough that tiny quantities make it to specialty shops outside New England.

I've made ice cream from both goat's milk and goat cheese and thought they came out pretty well. The goat milk version was made from milk that a friend of mine provided from her goat herd. It was really good. I think the goat cheese ice cream was a bit more, shall we say, controversial. It was served with a balsamic reduction and at least one friend still recalls that as one of the strangest foods he's had.

That looks so yummy! May I ask what ice cream maker you are using and if you recommend it? I've been looking for a good ice cream maker and can't decide what brands are good.

Welcome, Karina!
Another vote for the Cuisinart...it is dangerously easy and makes great ice cream!

Enjoy!

That frozen yoghurt looks lovely in the pic.
I adore frozen yoghurt. (And any kind of ice cream clone, really.) I don't dare have an ice cream maker.

Thanks all for the welcome and for the advice! I would often wonder if it made an extraordinary difference in the price difference and brands! It became too overwhelming that I just decided it wasn't the right time to purchase it yet. Will definitely give this one a go. Thanks a lot!
