Frozen Leg of Lamb Help.

OK, I found a frozen bone -in leg of lamb in the bottom of the freezer. It has been in there for 8 or 9 months. It is in the original wrapper and does not appear to have any freezer burn. Is this safe to eat? Will the flavor of the lamb be adversely affected? Should I roast it normally or maybe just use the lamb differently? Toss it?

Totally safe, no worries. Flavor should be fine. If there's "freezer burn" it will be cosmetic anyway, since you're going to roast the thing. I wouldn't worry about it at all, Bill. Heck, I've eaten much older meat out of our freezer. :lol:

What Robin said, though I'll add that it probably is a little drier than it was 8 or 9 months ago, and that brining before roasting will be of enhanced value. Stud it with cloves (fantastic complement to lamb) and then toss it and a few bay leaves in a tub of water with equal amounts of sugar and salt and leave it overnight.

We would thaw it, butterfly it, and marinate in your favorite marinade; and grill slowly. That will more than make up for any loss of moisture.
