Poll: How do you like your slaw?

by Robin Garr » Tue Jun 28, 2011 5:11 pm

Start with some fresh cabbage, sliced paper-thin. Add Vidalia onion, ditto. We're on our way to slaw! But now the decision: Vinegary or creamy? Or, possibly, other, like the Asian-style slaw I made the other night with a blend of white miso and peanut butter? What's your pick, and why?

Because my mother made it this way and I think it is the best ever. Green cabbage, shredded thin, green onion, white and green part, chunks of fresh, cooked shrimp. Dressing is Best Foods mayo, apple cider vinegar, sugar, all to taste. I add some Tabasco dashes. Sometimes I put red cabbage in, with grated carrots and leave out the shrimp. Sometimes I add cilantro. I've tried dozens of ways, but always come back to what I grew up with,

This is what I make and is great with BBQ ribs, etc. While I love mayo in most things, I prefer this type.

Cole Slaw Dressing
Ingredients:
1/4 cup sugar
1 tsp. paprika
1/2 tsp. mustard powder
1/2 cup cider vinegar
1/4 tsp. salt
1/2 cup Extra Virgin Olive Oil
1 tbsp. celery seed

Instructions:
Process ingredients in food processor or blender until smooth.

I prefer mine vinegary and tend to stay away from the mayo versions, mostly because of bad associations with crummy, overly mayonnaise-y grocery store slaw. That said, I'm sure I'd like a good homemade version that contained mayo.

On the creamy end for me!

And with more of a sweet profile rather than spicy.

I find that cole slaw is one of those foods I rarely find made in that simple down to earth "coney island" style that I like best. It usually seems to be on the spicy/vinegary end of the spectrum, in my experience.

One of my ideal "comfort matches" for cole slaw is alongside fried chicken and mashed potatoes. Not adventurous but timelessly delicious! :)

I feel a picnic date on the horizon... :D

I like creamy, I like vinegary and I like Asian, but it depends on what the actual ingredients are and the ratio of the ingredients to each other. I've had good, bad and excellent versions of all three styles.

Made a slaw last night. Shredded cabbage & carrot, julienned red pepper, green pepper and onion. Dressing of cider vinegar, veggie oil, sugar, salt and pepper. Yum!

This is the recipe I always use. It's our favorite. I also like it "just tossed" so that the cabbage remains crisp.

2 tablespoons minced onion
1/3 cup white sugar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white wine vinegar
2 1/2 tablespoons lemon juice
Hello. My name is Carrie, and I...I....still like oaked Chardonnay. (Please don't judge.)

Non creamy Italian slaw: Shredded cabbage with garlic that wilts in olive oil, salt, and white wine vinegar.

My numero uno favorite version is cabbage, cilantro, slivered red onions and spanish peanuts tossed with just peanut oil, white wine vinegar and salt.
