Roast Bakes

Has anyone had these, or know of them?

Roast Bakes

When in Trinidad and Tobago and you ask for bakes, it is likely that they will ask you if you want bake bake, roast bake or fried bake. Do not be confused, bake bake refers to bakes cooked in an oven.

Prep Time: 10 minutes

Cook Time: 25 minutes

Dough resting: 30 minutes

Total Time: 1 hour, 5 minutes

Yield: 4 - 5

Ingredients:
•4 cups all purpose flour
•4 1/2 tsp baking powder
•1/4 tsp salt
•1 Tbsp white granulated sugar
•A pinch of ground cinnamon
•1 Tbsp unsalted butter
•Lukewarm water

Preparation:

1.
Add flour, baking powder, salt, sugar and cinnamon to a large bowl and mix thoroughly.

2.
Rub butter into flour mixture.

3.
Add enough water to make a soft dough. When dough comes together, knead for 2 - 3 minutes. Rub oil over dough and let rest, covered, at least 30 minutes.

4.
Preheat oven to 350 degrees F

5.
Knead rested dough for 1 minute and divide into 4 - 5 equal pieces. Form the dough into balls and roll into 3 1/2 inch circle. Transfer to a parchment-lined baking sheet with adequate space between each disk.

6.
Bake for 25 minutes or until the top in lightly browned but the bottom when rapped, sounds hollow.

7.
Cool on a wire rack, slice in half and serve as you please

When I was in Trinidad (1977) they had stands set up on the beaches that made and sold "Shark & Bake", which was a battered, seasoned, deep fried piece of shark meat, served on a roll. Quite tasty, if I recall.

Roast Bake or Bake Bake refers to the bread. I find it interesting because it does not have yeast and looks easy to make for one who does not like to work with flour and yeast. I was wondering if anyone had tried it and if the bread held together well, and would be suitable for hamburgers.

Looks like a research project is in order here. Due to work and travel issues, I'll probably not have a chance to mess with these in the near future, but I'd be interested in hearing about the results if anyone else gives them a try.

Wow, I agree. Karen, why don't you whip up a batch and pass 'em around! Looks delicious, and I would happily test one right now complete with cucumber and salami (a perfect breakfast for a nontraditionalist like me).

Hey Jenise, I plan on whipping some up, hopefully this weekend. I'd go with the salami and cuke too, even for breakfast.

Here is how mine turned out...very tasty, dense bread. I thought they would be softer. I'm not a baker and probably did not knead properly.

Indeed, and they also have a remarkable resemblance to pita breads.

I saw some of these at the Farmer's Market yesterday, made by a new bakery in town. They looked exactly like the first photo I posted. They called them thin sandwich bread, and the ingredients included yeast. I'm going to pick some up this week and see how they compare.
