Question about hearts of palm

I love them and bought a large bag of whole shoots at the Asian grocery store. Never had them fresh and did not like the funky taste [ Asian grocery store smell]
Is there any preparation involved in fresh shoots ? The texture is the same as those in a commercial jar.

The prep is kind of like doing leeks. Remove the tough outer layers of the stalk, until you get to the tender heart. Cook in boiling salted water. I buy jarred hearts of palm at Trader Joe's and also have found some good canned brands,as well. We like them in green salads with kalama olives and varieties of tomatoes in tomato season. A lemon vinaigrette is great with them. I have not done much else with them. If you Google "fresh hearts of palm" a lot of recipes and preparation methods pop up. I have never seen the fresh where we live, so have not had the opprotunity of using them that way.

I also like them baked with a little herbed butter and a splash of citrus juice or white wine. With just a little garnish it makes an elegant unique side dish.
