How to store shrimp paste ?

by Christina Georgina » Tue May 17, 2011 12:22 pm

I've been using Thai shrimp paste lately and love it. How should one store the unused protion -- not that there is likely to be much for long as I'm using it very frequently !

Christina,
I have tried freezing it in the past, but defroting it for a few tablespoons of the stuff was a pain. So now, I just close the lid and keep it in the fridge. So, far (several months) no problems. Some brands have a layer of wax on top which seemingly keeps it fresh for a longer time.

Gotta do the ice cube tray trick: portion it out while warm, then freeze.

It will keep tightly sealed in the fridge forever.

What Carl said. Thai shrimp paste is decomposed already, when you think about it. It keeps for months--if not years--under simple refrigeration in a sealed container. It's probably even safe for years at room temperature, but I've always kept it in the fridge.
