Summer Savory ideas

by Karen/NoCA » Fri May 13, 2011 8:47 pm

I have sumer savory growing in my herb garden. I know it goes great with beans, and I just came across a recipe using it with a Yukon Gold Potatoes and green bean salad. Do any of you grow it and use it in a favorite recipe?

Karen, one of my favorite uses for summer savory is in a braised beef dish wherein I cook the beef in a lot of beef broth that concentrates and reduces while the meat cooks. I add savory at the start of cooking and at the end, as a fresh finishing touch, I add more with a lot of minced garlic and maybe a few other chopped herbs, like rosemary and thyme. That melange is scooped over thick slices of grilled artisinal bread, which is so much lighter than potatoes or any other starch would be and therefore quite suitable in spring and on cooler summer days.

This sounds heavenly Jenise..which cut of beef are you using? Gene would really go for this, using the grilled bread. Did you also use the usual onion, carrots, etc. used in most braising dishes, and any wine?
