Wine Match with Mac'n'Cheese

by Doug Surplus » Tue Apr 19, 2011 5:06 pm

I'm making a mac n cheese dish for dinner, white cheddar, roasted chicken, onions, garlic and a small amount of ground chipotle (Penzey's). I'm thinking either Pinot Noir or Rhone. For the Pinot I'd want to go more earthy than fruity, for the Rhone, leather and spice are beckoning. Differing opinions, both as to the wine and the style are welcome.

Doug, we often do this match, and I always like a fairly simple but tasty red Rhone (or maybe Languedoc), or a lower-tier Chianti, all of which seem to me to have the right combination of fruit, acidity and tannins to complement the tangy dairy richness of all that melted cheese and deliciously caramelized bits.

A better question might be what style of wine wouldn't work with this dish?

Sounds delicious.

I'd go in a slightly different direction. I would go with a Chardonnay with some heft. I'm thinking Macon which has some weight that would stand up to the cheese. If you go new-world, you could go with an un-oaked chard, or one that is lightly oaked.
Cheers,

I'm late to the party, but like Robin, I'd have gone Rhone too, though on a hot day I like the big chard answer too. The dish you describe is so versatile, like Rahsaan suggested, almost anything would work. What, btw, did you choose?

I found one in the rack I forgot I had, an '04 Domaine de Nizas Coteaux de Lanquedoc - 60% Syrah, 35% Mourvedre and 5% Grenache. It was in good form and matched nicely.

The late Baron Philippe de Rothschild opined that his favorite match for Mouton was mac 'n' cheese.

Just sayin'
