Steens dark cane syrup

Read about it in Saveur and ordered some to make a damp gingerbread. Not nearly as sweet as Lyle's but made a delicious, dark gingerbread. Will definitely keep it in the pantry. Anyone familiar with it ?

I am not familiar with Steens but it sounds delicious. Gingerbread is one of my favorite desserts. I use a recipe from Gramercy Tavern that uses molasses and guinness stout. Really nice with a translucent lemon sauce to go with it.

Tim,
Please post your lemon sauce recipe. Looking for something other than powdered sugar or ice cream to serve with it. The recipe I used calls for butter, syrup, flour, egg, milk and lots of ginger. It is quite good and not overly sweet.

Lemon Sauce

Note: A very nice translucent sauce. Very good with gingerbread.


Combine and stir in a double boiler - over - not in - hot water
until thickened.

1 cup water
1/4 - 1/2 cup sugar
1 tablespoon cornstarch

Remove from heat.

Stir in:

2 to 3 tablespoons butter
1/2 teaspoon grated lemon rind
1 1/2 tablespoons lemon juice
1/8 teaspoon salt

Stir to combine.
