Almond Meal

Once in awhile I will buy a product with out a thought as to what to do with it. Such was the case at Trader Joes last time I was there. The almond meal looked interesting so I bought it. After a quick search on the food channel though the only thing I came up with was a pound cake recipe. There must be other ways to use this product... perhaps a coating for a filet of some kind. I am open to suggestions if anybody has worked with this before.

My wife tends to keep this around for baking, but I don't know of any specific recipes offhand. That's all we've used it for.

You can sprinkle almond meal onto cereal or yogurt. It ups the healthy fats and protein in the meal. You could also put it in a smoothie.

We use it and hazelnut meal to make a flourless Christmas cookie, and we used to spend lots of time ginding nuts for. It can be used in a variety of gluten free recipes for folks that need that.

I use almond meal in place of any recipe that calls for measuring and grinding almonds. If a recipe calls for 1/2 C slivered ground with 1 C sugar, I will substitute the almonds for 1/3 C almond meal, and follow the recipe from there. Most frequently I use almond meal as the base for my fruit tarts (apple, pear, nectarine, etc.). And, of course, it is wonderful as an ingredient in my Ameretto Pound Cake or almond citrus pound cake. You can find recipes for other uses on Bob's Red Millwebsite.

The first time I ever used ground almonds, or almond meal, was in following a Wolfgang Puck recipe for crab cakes both as part of the binder as well as the outer coating. Worked out very well.

Somewhere I have a nice custard tartlet recipe that uses pecan meal in the dough.

Almond meal makes a nice thickener for stewed fruit.
