Shulman posted a delicious recipe on the NYT website recently; I make a much simplier version of the dish -- just beans, kale and vegetable stock, which is quite wonderful to my taste and dead easy to make. Lasts for at least 10.

I'm having trouble finding lima beans -- Trader Joe had two bags of frozen that worked well, but the local store has no plans to restock. Can anyone suggest a substitute for lima beans?

Speaking strictly of dried beans here I'd use cannellini, but have to admit that limas have a very special texture that's just superb for some preparations--I make one particular bean soup that if I couldn't get limas, I just wouldn't make. But strange that your local store has no plans to restock. Unlike a LOT of other things, dried limas have been a supermarket staple in every place I've lived since I was a small child and I'd think that no different, then, on the east coast. Why the change I wonder--they have to make room for more Pop Tarts?

Purcell Mountain Farms and Rancho Gordo both carry Christmas Lima Beans. They are a large, cranberry and white bean. Very delicious.
