If you are a bread maker and have not made it, I highly recommend this 100 % durum flour bread as found in Carol Field's book The Italian Baker. It is worth searching out the durum flour to make this excellent, pale golden bread with a wonderful crumb. You can use the flour for making the Sardegnian flat bread and mix it with all purpose or OO for making pasta. Once you start working with it you will want to have it on hand all the time. A beautiful flour.
