Can I make this a day ahead?

by Karen/NoCA » Wed Nov 17, 2010 8:20 pm

I've been asked to bring a sweet potato dish for Thanksgiving. I need to make it on Wednesday. I'm wondering if I can cook the sweet potatoes in the dutch oven as suggested, then refrigerate them until Thurdsay. I would put together the topping ingredients, leaving out the nuts, then bring it together on Thursday for finishing in the oven. Will I compromise the flavors and texture of the dish? Here is the recipe.

Don't know any reason why that wouldn't work. We do ours a little differently and start the day before. We cook the sweet potatoes in a pressure cooker. Then we peel and cut them up into a casserole. We the other ingredients and hold in the fridge until the next day. We put them in a 350 degree oven for 30 minutes if at room temp, or 45 minutes out of the fridge.

I'm with Carl; should work just fine.

Thanks, I usually have baked sweet potatoes, or use them in stews, etc. I have not made any casserole type dishes with them. This is a great! :)

This is our recipe:

Candied sweet potatoes ---

5 lbs yellow sweet potatoes or yams. Cook in pressure cooker or boil till done. Peel and slice into baking dish. Slice a stick of butter into them. Add Lawry salt, pepper, and orange peel to taste. Dribble or sprinkle 1/3 C each honey, brown sugar, and orange liquor over potatoes. Cover and bake for 30 minutes at 350º or if prepared the day before 45 minutes right out of the fridge.
