RCP: Grilled Coconut Kale

Kale leaves are marinated in spicy coconut milk, then grilled--KILLER! From Vij, a restaurant in Vancouver BC (and printed recently in the NYTimes). Note: the recipe assumes a fair quantity of kale. For the quantity I needed for two, one can of coconut milk or one third of the recipe produced great results.

1 bunch kale

3 13.5-ounce cans coconut milk

1 tablespoon kosher salt

1 teaspoon ground cayenne

1 teaspoon mild paprika

¼ cup freshly squeezed lemon juice.

1. Wash the kale thoroughly and cut out the stalks. Cut the wide leaves into strips the width of the small leaves.

2. In a large pot set over a low flame, heat the coconut milk until it is thoroughly mixed and just lukewarm. Transfer to a large, nonreactive bowl and add the remaining ingredients. Stir in the kale, cover with plastic wrap and refrigerate for at least 4 hours.

3. Preheat a grill or a cast-iron grill pan over high heat. Remove the kale from the refrigerator and stir to make sure the leaves are well covered in marinade. Using metal tongs, place the kale on the grill in a single layer. Cook for 45 to 60 seconds, or until the leaves are sizzling, then turn over and grill the other side for another 45 to 60 seconds, or until the leaves have visibly softened. Serve immediately. Serves 6.

This is a most unusual recipe. Does the kale shrink down like it does when you sauté it?

Around here a bunch of Kale costs a buck or two. A can of coconut milk runs $4-5. Lemons are buck apiece. May have pegged the difference a little high, but not much.

Pretty high for coconut milk, Carl. I think I typically pay under $1.50.

Wow, pricey area! I've never seen lemons for 1.00 each. However, I don't think I've ever bought a lemon outside of CA. They are a staple in our house and when we travel in the RV, I take a bunch with us.

Lemons have to go some distance to get to Maine. But here's the bright side: he can buy lobster for peanuts compared to what we pay.

Well, I had a shock today...I checked Raley's adds - I could only find the one for Sacramento area...ours will be out tomorrow. Guess what? Lemons and Limes for 1.00 each. This blew me away! More so for the limes which are half the size of a lemon. good grief!
