Would assume Craft or Craftsteak, but no actual knowledge. This being the internet, lack of certainty doesn't stop me from posting!

Here is an excerpt from an article on "Craft"

At Craft, Mr. Colicchio’s flagship restaurant on 19th Street, there is no caramelized yogurt, no grape-pumpkin marmalade. Even at Tom: Tuesday Dinner, the supper club he ran there for a time, the composed plates did not exhibit the sophistication currently on offer at Colicchio & Sons.

I believe this refers to the original New York Craft, not Vegas.

I just googled around and could find Tom's name attached to only one restaurant in Vegas, Craftsteak at the MGM Grand, so Dale was right.
