I've yet to see one in the flesh, but aren't they purdy?

I understand they're called Zebra potatoes, though in Southern California they've also been dubbed "Laker bakers". :)

Do you suppose the insides match the skin colors?
I'm sure you've seen those Asian sweet potatoes that are blonde on the outside and vibrant purple on the inside. They are also delicious. The best ones we've tried were in Hawaii.

I've tried those! Didn't like the ones I had--I believe they were called Okinawan. WAY too starchy, but they might not have been fresh enough.

When these "Zebra" potatoes were introduced in the Mediterranean Basin (Greece, Turkey, Lebanon, Israel), they were first put on the market as "ideal baking potatoes". People quickly realized that these were starch-rich potatoes and now they are justly being sold as fine for chips (French fries). Truth is I have found them a colorful novelty but not good for very much at all because of their super-high starch content. Might make for good potato flour....
