Bolognese Sauce

by GeoCWeyer » Fri Oct 08, 2010 2:08 pm

I ran across a recipe for Bolognese Sauce using a crockpot. I liked the idea and threw together my own using my crockpot. For speed I cheated and used a frying pan to brown the ground meats (The recipe did this also). It really could all be done in the crockpot if one has the patience and organizational skills to make it over an entire day or do it as a two day procedure. It really requires little attention and work.

Spray interior of crock pot. Cook on high ground meat until done and in part browned. Empty crockpot. Drain fat off meat. Place finely processed vegetables in crockpot with a little wine and cook for 2-3 hours on high. Add meat and cook an hour or so longer. Then add rest of ingredients and continue cooking covered 3-4 more hours. Once simmering the cover can be cracked to reduce liquid if necessary. I used the sauce the next evening. I took a suitable portion for 2 and reheated it in a pan with 1 tsp of tube tomato paste and 1 1/2 TBS water. I stirred in the sauce along with a spoonful of mascarpone into cooked pasta and served.

We ate one meal and then I froze the rest in 12-16 oz containers to be used at a later date.

Assume it was good, George? I can imagine the crock pot would be an ideal method for Bolognese.
Sounds like you like the type of Bolognese I like as well. There are so many different preparations. I like the ones that are a sort of medium brown color with very little tomato and a hint of milk. (The marscapone sounds like a great addition.) Len likes the ones that have more tomato and no milk.
Hello. My name is Carrie, and I...I....still like oaked Chardonnay. (Please don't judge.)
