roasting peanuts

My son is allergic to tree nuts, but loves dry roasted peanuts. All of the peanuts available in stores are processed on the same machinery as tree nuts. I just ordered some organic, shelled, raw peanuts. Does anyone roast their own peanuts? Any tips? Thanks.

Years ago I used to buy sacks of raw peanuts from someone in a southern state. They came in burlap bags. The kids and I roasted them in the oven, per the instructions that came with them. All I recall is that they had to be watched closely and when they came out of the oven, we let them cool on the roasting pan because that is when they dried and became crunchy. I always wondered why they were so huge compared to the ones we get in jars at the stores. We loved them, and tried all sorts of unusual flavor combinations. Have fun.
