Halloumi Caprese (?)

Last night, we had a riff on caprese out of Carina Cooper's book, "The Working Cook". It involved slices of grilled halloumi cheese served with big chunks of heirloom tomato tossed with shredded basil, EVOO, and capers. Beautiful to look at, absolutely delicious, and a nice change of pace from our normal mozzarella-basil-tomato salad.

Sighing in pleasure. Grilled or fried chaloumi (sorry but that's how I spell it) with tomatoes or halved ripe figs is indeed a treat. Will pick some up in the shuk on Monday for sure!!!!

Oooh! Wonder if Halloumi is available up here? I've not looked for it, but I believe it has a following in the Greek community and there is definitely one of those up here.

We just happen to have some figs that a foraging neighbor brought over. I'll have to try this....
