Yesterday's CSA box had some very lovely, round, little white potatoes. Salil was over for lunch, and it seemed like a good opportunity to put our combined brains to work on how to use the potatoes. The prep was really simple:
Quarter the potatoes into wedges & lay on baking sheet
Add a little oil
Salt
Sprinkle black mustard seeds
Chili powder (ours was a Kashmiri chili - only a little hot)
A light grind of black pepper
Add in some sliced onions
Bake. I started them at 425, but turned it down to 350, as the onions were getting too dark. When there was about 10-15 minutes left I added some chopped garlic. Total time in the oven was about 30-35 minutes.
Delicious!
Next time I will either cut the onions thicker or add them a little before the garlic rather than at the start.
