King Oyster Mushrooms

While watching a cooking show a few days ago, I saw the chef using what he called King Oyster Mushrooms. They were a single large white stocks with a somewhat round oyster mushroom looking head. He referred to them as"very beefy" and asked his audience to take note of the heavy bottom stock. I had never seen this type of oyster mushroom before and went looking for them. No luck until I called a locally owned gourmet market across town. They told me they could have them in by this morning. So I drove there this morning and the produce fellow (who formally was with Whole Foods) brings them out...oppps. They were large all right but just the regular clod of oyster mushrooms that have everything from very tiny to large growing out of a central clod, as the produce person called it. When I described what I saw on the cooking show, he did not know what I was talking about. He told me not to cook them too much because the get tough. Well, that is great, I thought to myself, because the pasta dish I want to make with them tonight calls for cooking them to golden brown.
Are the ones I got just babies? Or are the King a different variety?

They're a common item in oriental grocers, Karen--do you have any in Redding? Very very good shrooms. Lovely to slice in medallions across that big stalk and saute lightly.

Yes, we have several in Redding and I did not think to go there. Old shopping habits, etc. I need to venture out to the Asian markets like we have the restaurants. I'd love to try some of those Kings. Thanks!

I've never heard of this 'king' business but I'm a big fan of oyster mushrooms. I buy them a lot at farmers markets because they have more interesting flavor than crimini but don't cost as much as chanterelles, morels, etc. But usually I don't look for ones that have grown too large. Interesting.

Oh, thanks. I've been buying some mushrooms that look pretty similar to those, I forget what the farmer calls them. I'll check tomorrow if they are available. But the ones we've been getting have lots of flavor.

I buy those at the Korean market(s) around my part of NJ. You can find them at Wegmans for 2 or 3 times the price.

And I slice lengthwise, fry or grill, and serve with home made Bulgogi. The Korean markets also have lovely beef pre-sliced very thin, and big jars of Korean BBQ sauce, so making Bulgogi at home is very easy. This dish is also quite popular with my friends.

Shitakes are much stronger in flavor. The Kings (your picture and Celia's are good, but for scale purposes and Rahsaan, they're usually about 5 to 6 inches tall and the stem part is close to 2" in diameter--they'll come two or three to a pound) have a different taste that's similar to oyster, but the choice of these is not about the flavor so much as the size and texture.

I saw them today at the farmer's market and indeed they were labeled king oysters. I had never checked. (Preferring to focus on how they looked/smelled/etc). I had just bought some last week for pizza, and they were great. But this week was in the mood for something different and went with maitakes.

Digressing for a minute to share a funny story.

A friend of ours walked into one of our local supermarkets and asked the guy in the fruit and veg department if they had any gourmet mushrooms.

The bloke paused for a second, then said, "Hmm...yeah...I think we might have some of them shit takes". :)
