best way to defrost cupcakes?

by Maria Samms » Thu Aug 19, 2010 5:12 pm

I have some mini vanilla cupcakes that a made a few weeks ago and froze right after they were cool. I wanted to serve them warmed tomorrow evening for a party I am giving with a banana's Foster topping. Any ideas on the best way to thaw...should I do it overnight in the fridge or leave them on the counter tomorrow to defrost? Covered or uncovered and what about warming them up? TIA!

Maria, Hi...

As with all cakes, defrost overnight in the frig, covered lightly with Saran wrap to keep odors away from them and then heated gently in a regular oven.
