I finally got around to use the balance of my smoked salmon. I made Smoked Salmon and Flounder Cakes with a Sweet Corn Sauce.

Essentially, the cakes are a seasoned mixture of mashed potatoes and fish, dredged with panko crumbs and sauteed, then finished off in the oven. The corn sauce is a sauteed mixture of onions and corn, with chicken broth and cream that's whirled in a blender.

Yummy with a bottle of Pinot Grigio.
