What happened to my beets?

In preparation for Saturday's terrine dinner, on Friday I cooked five large chiogga beets. I pared them down and used a biscuit cutter to create perfect cylinders and put them in the fridge--Stage two would come on Saturday morning when I would slice on the Benriner and pickle with a bit of vinegar, water and salt.

When I opened the container on Saturday I was shocked to find that two of the five had developed a large black spot each. Large meaning about the size of a dime sized marble.

WHAT? I haven't a clue what would cause this. I noted that the two affected beets were also the two with the most red, the deepest colors (chioggas are wonderfully marbled with color and no two, cut open, are alike). So could it be sugars and oxidation? Would that hold up even though the spots seemed to come from within the beet, it wasn't neccessarily at the surface or uniform around the edges?

Fortunately, I was able to get the 36 slices I needed from the other three beets so this problem didn't set me back, but it was so strange, and I'm curious if anyone's seen it before or has an idea why it happened.

And if there's anyone here who has never prepared chioggas or appreciated how heart-stoppingly beautiful and varied they are, this close-up's for you:

Must be the same phenomena, Bob. But she doesn't know what caused it either. Hmmmm! Interesting reading people's descriptions of all the varieties there, though. That's about 840% more than I knew about beets when I got up this morning. :) But seriously, I found myself want to slap the guy who complained that chioggas taste dirty. It's earthy, dude, the word's earthy. And that's precisely what is so good about them, rather than just being relentlessly sweet like the dark red beets they're less so, earthier, and the sweetness varies even among a handful of chioggas (the redder ones being sweeter, the lighter ones being more minerally). There's a sense of anticipation about every bite. The guy who complained must be a Yellow Tail Shiraz drinker. :wink:

The guy who complained must be a Yellow Tail Shiraz drinker.

Perhaps you do not like Yellow Tail Shiraz but there are many who do, including myself. It is a very popular item at Trader Joe's, Raley's, Holiday Markets (locally owned) and according to my son who works for Southern Wine and Spirits is very popular with the hotels, restaurants, etc. that he serves. How can a person be labeled by the wine they enjoy?

Karen, Yellow Tail Shiraz is enormously popular--I think it's the best selling wine in America, and it succeeds because it has higher residual sugar and lower acid. For a large segment of our population that makes it a great everyday wine, but me here, the acid lover without a sweet tooth, all I taste when I drink it is sugar. Dark red beets, which I do like by the way, are more toward the Shiraz end of the spectrum if one is to compare beets to wine, which I probably shouldn't have done. The paler of the chioggas would be more like a Beaujolais--more subtle and delicate.

I planted golden beets this year and they are terrific. I find that the color pales as they cook but intensifies when dressed. The golden has the distinctive earthy, mineral profile as well but it is still quite sweet.Don't have a clue about the Chioggia spots. Did you taste it ? was it a different texture and or taste ? Great prep for a garnish or salad.
I can't pass up a bundle of small, fresh beets at the farmer's market. I love them roasted, boiled, grated raw ....in any kind of dish
