Just back from the end of week shopping expedition. I have bought a whole rainbow trout, about the right size to feed two.

I thought first I might oven-bake it, and serve it up with burnt butter and almonds. But that's what I usually do with trout. Any suggestions?

Sizzle bacon in a pan till crisp; reserve and crumble. Soften onions and tomatoes in the same pan. Sautee fish in the pan; near the end of cooking, return the bacon.

(Oh, yes, and all the preps you and Howie mentioned, too!)

Split it open and remove backbone and any others lurking around. Brush with melted butter and sprinkle with smoky paparika. Broil for three to five minutes depending on size, we do barely legal brook trout three.

Season cavity and outside with salt and pepper, stuff with thinly sliced lemon and either fresh tarragon or fresh dill. Brush with olive oil and toss on the grill over hot coals. Fish is done when it flakes, about 4 minutes per side (depending on size of fish).

We do the same but stuff with chives instead of lemon and tarragon or dill. Tasty.

I usually butterfly it, dredge it in seasoned potato starch, and pan fry it in olive oil and butter. Then just squeeze on some fresh lemon.

Our neighbor gave us a nice size fresh trout three days ago..I put it into the freezer . Now I have some ideas what I want to do with it.

Thanks for the suggestions, folks.

In the end, I oven-baked it and served it with burnt butter and flaked almonds. The Francophile's favourite ... talked me out of experimenting. (And it was delicious.)
