Killer Bread

by Bill Spohn » Tue Jul 13, 2010 10:33 am

Did I post this here before? Don't recall, but Hoke's bread thread reminded me. This is a really great recipe for no knead bread made in a Dutch oven. It is crisp outside and wonderfully moist and cool inside. Even if I am repeating myself, it is worth it!

Interesting, Bill...because the bread that Dan brought over was also no-knead and Dutch oven baked.

Sounds like the guy that's pushing this technique knows whereof he speaks.

A whole bunch of us got onto this kick after the New York Times did an article about it several years ago. I'm certainly a fan! (p.s. the Dutch Oven is nice, but not a neccessity unless you want a taller loaf. You get a great rustic ciabatta effect by just dumping it on a hot sheet pan.)
My wine shopping and I have never had a problem. Just a perpetual race between the bankruptcy court and Hell.--Rogov

Here's the original New York Times article by Bittman about Lahey's procedure, Carl:

And here is the recipe:
