Interesting description of the cheese having a fudge-like texture. Reminds me of the Icelandic cheeses which I didn't care for. That it they were the result of cooking makes some sense.

I have been eating Gjetost for 40 years and love the stuff! I usually melt it over a thin piece of rustic bread or flat-bread, even crackers, sometimes. It is sort of an acquired taste/texture, not what most people expect when having cheese. Now I got to go have some!

It does seem like some weird hybrid of caramel fudge and cheese. I can't say that it's bad but as Jon says, it's not what you expect when you eat cheese. I'll have to try melting it over something.

I was excited at first because True Love can't eat things from cows. However the NYT article says that law in Norway only requires 10% of the milk to be from goat, and the rest can come from cows.
