What kind of mandolin do you have?

I used to have a, oh what's that Swiss company who makes all the kitchen stuff, Zwiss, Zweiss, Zyliss? Something like that. Worked fine, but there was no adjustment on thickness which I complained aloud about one night a few years ago, announcing my intention to get a Benriner from Japan. I remember that Christmas was coming up, and this kind of vocal complaint about that time of year usually results in me finding some things I truly need under the Christmas tree while making Bob feel like the most brilliant husband in the world.

Well, adjustable=good he remembered, but Benriner he didn't, and so what I got for Christmas that year was an Oxo Good Grips brand jobbie that was indeed easily adjustable. It even had sturdy feet that folded down to elevate the blade end. But what it also had was a blade that went dull the first time it so much as looked at a potato and after three years of suffering with it, I finally threw it in the donation pile last week and bought a new Benriner online. Bought the extra wide model.

Oh yes, I considered going with a pro model, but frankly I love the convenience of something that fits in the drawer under my prep counter.
Haven't used it yet but reading about Celia's microwaved potatoes, I suddenly see how Benny's going to lose his virginity.

What kind of mandolin do you have?

I have a Bron Coucke (http://www.bron-coucke.com/version_gb/index.php) which has plenty of adjustments and shapes/cutting sizes, etc.

I'm perfectly happy with it although I'm not a professional and don't really have anything to compare it to so I'm not sure what my opinion is worth!

But, it does make potato gratin a lot easier, nicer, and comes out great with super-thin uniform slices. When I first got the mandolin I made about 5 different gratins in 2 days..

The cheapest Benriner. Have had it for about 6 years and I use it a lot- especially in summer. I think it's great but have never used the high priced jobs. The storage convenience is a plus for me as well. I think you'll like it for C's potatoes.

Two in my kitchen, a hypermodern stainless steel thingamajig purchased in Paris about 20 years ago that does just fine and on which the cutting edge never seems to dull; the second an antique wood board and on that mounted a far newer cutting edge purchased in Japan and made of what I am assured is "cromova 18 stainless steel".

Pampered Chef :oops: that my FIL gave us because he didn't like it or cut himself on it, I forget which. Rarely used, really, so it doesn't really matter much. Primarily just for French Onion soup and Potatoes Anna.

I have a plastic Kuhn Rikon which can't be sharpened or adjusted (drives me mad), but works well enough for about 18 months, and then I buy another one.

Actually, the cook's instrument is called a mandoline (French spelling) because the rapid back-and-forth motion across the cutting surface very much resembles the hand motion of strumming a mandolin.

Did you say in the past that you have a fondness for antique kitchen stuff, and is that why you have the second or does it do something the other one won't?

Yep, that's the one.
My grandfather had one and played it. Mom, at the age of 91, can still tell me "That's an F." Or whatever - I couldn't tell an F from an R. I inherited Dad's tunelessness. :(

German made GSD with three inserts, slices, 1, 2, 3, mm thickness. Has an end piece proctector, easy to use, clean and store. If you make fries and chips, this unit is great.

Ours was inexpensive ($29?), beige plastic with instructions and lengthy safety warnings embossed on it in German and English. I can't find the brand name on it anywhere.

No legs, no French, lots of writing that's hard to read because it's embossed (actually slightly extruded) small print in all caps, no color contrast with the background beige. I guess the plastic models in that price range are all pretty much of a type, though.

I've got a De Buyer Swing Mandoline Semi-professional. Does most things well, though thickness adjustment is a little tetchy. Can't get on with julienne though that's probably me not being prepared to persist at it.

I use it when I've got a load of slicing to do. With just one onion, it's not worth the hassle of washing it up afterwards.
