Snap Peas

I was disappointed in the germination rate of my snap peas planted on April 1 but now I don't know what to do with the excess ! They are extremely prolific - about 1/2 to 3/4 # per day. Also discovered that the larger they are, the sweeter they get without getting tough or stringy. I was also dissappointed that this variety did not seem as sweet as the one I planted last year but an extra day or two of growth made a lot of difference.
Steamed, in stir fries, in a leek/pea/mascarpone sauce for pasta, in a fritatta...am running out of ideas. Any suggestions ?

I like sauteeing for a couple of minutes, then adding balsamic vinegar and a teaspoon of honey to glaze, then topping with roasted sesame or sunflower seeds. (Throw in some asparagus with the snap peas, then open a Gruner Veltliner!)
