Making the best of it...

I don't know that I would call this much in the way of cooking, but tonight I was short of time, and had a few things on hand: a cooked chicken thigh, white button mushrooms & broccoli rabe (from the CSA). So I sauteed up a little garlic in some oil and butter, dumped in sliced mushrooms & let them go for a bit. Then I added the broccoli rabe & cooked it part way down before tossing in the "cubed" chicken. Some salt, pepper & a touch of dry-ish Riesling made for a lovely bit of food that only lacked for some red pepper flakes & a small bit of pasta to make it complete. Yummy!

Certain leftovers aren't a problem, they're a gift, and repurposing them is a creative outlet in its own right. You did good!

I call it reincarnation cooking and I love the challenge almost more than the putting the original together. I've made it an ecological imperative [ waste not...use everything but the squeal....] so it makes me feel even better. Well done.
