Purple Potato Salad with Lavender

Last year I attended a Lavender Fest in the foothills near here. The food they served was fabulous and the stunner was a potato salad made from purple potatoes and culinary lavender. The dressing seemed very light and I don't think it had any mayonnaise in it. Does anyone have such a recipe?

Can you provide more insight into the style of potato salad? Creamy American? German? French (i.e. vinegared)?

Well, it was one year ago, but I recall the purple potatoes were cooked perfectly, red onion, and the dressing was very light, I don't think it had mayo. There was an undertone of lavender but I did not see any of the lavender buds, so I'm thinking it must have been one of their spice mixes they sell, with the lavender ground in it. They won't give out the recipe, keep saying they are going to put out a cookbook. It was just a nice refreshing salad.

Karen, do you think they might have used a lavender infused vinegar as the dressing base? That was my second thought, my first being the addition of lavender buds, but you said it wasn't visible in the salad.

I never thought of that, but it could be, because I thought the salad had vinegar in the dressing and they do sell lavender infused vinegar. Good suggestion. Do you think I could put some culinary lavender in my champagne vinegar? I have some lavender I got from Linda Stradley.

You could sure try a small bottle/jar and see what happens. I'd let it get to the potency of your liking then strain off the buds/stems. I don't like leaving the infusing herb in the bottles, they get cloudy and I've noticed bitterness. Maybe too much of the oils being extracted?
