From Time online: Researchers at the Harvard School of Public Health sifted through more than 1,600 studies, ultimately identifying 20 that investigated the link between meat consumption and disease risk in more than 1.2 million people. They found that, while eating processed meats such as cold cuts, sausage and bacon was associated with a 42% higher risk of heart disease, they didn't identify any increased risk from eating unprocessed beef, pork or lamb.

I tried to italicize catchup in the Subject heading, to be clever, but I was not clever enough to figure out how to do it.

Haven't read the article. I take it this is attributed to the preservatives? Or is it all the other things people who eat a lot of processed meat tend to eat?

I knew I was going to have to pay for all that salami some day. :)

Salt and chemicals, I believe. Blood pressure is always a nemesis. That can be controlled, but I am assuming that a lot of people don't bother being checked because having HBP usually doesn't present symptoms. My take from this is that I will eat more red meat, enjoying a steak more often, something I almost never do, but check my BP regularly and have blood lipids checked periodically. If they (lipids) elevate, I can back off the meat and check them again. But not worry about red meat per se. Anytime BP elevates, one can always control it with relatively safe medicines.
