Idea for mini cake

by Christina Georgina » Tue Apr 27, 2010 5:50 pm

I am looking for something I can bake in mini muffin tins as a single bite-finger food dessert. I've tried brownies and it works when baked at less than half the recommended times but they are woefully ordinary. Need something with pizzaz.
I am wanting a chocolate something as the other dessert offerings will be mini cannoli and mini pistachio/cardamom baklava.
Ideas or additions to the brownie mix to pick it up ?

Christina, we make a min brownie cupcake which might work - it's based on a Mrs Fields recipe. It's on my blog here.

Cheers, Celia

Mini pies work out really well, the kind that are open-faced that is, like pecan.

No chocolate, I know, but how about little rum cakes? The Barcardi Rum Cake recipe can be found doing an Internet search and I don't see why it can't be cooked in small batches and the rum/sugar/butter glaze would give it the pizzaz you're looking for, I think.

I say: Do the mini-brownies but give them a twist... chopped orange rind, red pepper flakes, an M&M inside, side-by-side pours of brownie and blondie....

How about making fudge? It's endlessly mixable, shapeable....

Hi Christina,

I'm a frequent lurker on the board, but might be able to help with this one. I add a cup of really good quality chocolate chips to my standard brownie recipe. Replace the liquid with grand marnier, top with chopped pecans, undercook just a hair so that they stay moist and retain Grand Marnier flavor. I haven't tried it in bite-size, but think it would adapt.
