We always put our hand cut mozzarella over the tomato sauce and under the toppings. I'm not sure what the traditional method is, but we've found that doing it this way means a. the pizza looks prettier, b. we use less cheese, and c. the toppings don't fall off when we send cold pizza to school for the kids. :)

This is a very interesting question!

I must admit I'm not a frequent self-maker of pizza simply because I trust my own pizza making skills far less than eating the delicious work of someone (or a place) that does make wonderful pizza!

The few times I have attempted a simple home pizza, I simply proportioned the cheese over the sauce (then toppings last).

I know some of the deep pizzas I most enjoy in Chicago do the "cheese on top" routine so I know there's definitely different approaches and philosophies to the cheese placement. I guess as long as it results in deliciousness, all are good. :)

Generally just over the top but sometimes I will put a little over the sauce and then the bulk of it over the top. This is something that we did at Pizza Hut way back when. I generally only do it on thicker crust/more heavily topped pizzas like Chicago style.

I have not made too many pizzas at home because sometimes I want to order out, and pizza usually comes to mind. When I have made it and if I use cheese, it is always over the sauce and under the toppings. Anymore, for me, less is better with the choice of ingredients. I'm favoring veggie pizzas these days, with the more exotic things like wild mushrooms, artichoke hearts, summer heirloom tomatoes, and different cheeses.

I put the cheese on last in order to ensure that it gets a little burned - I love that flavor.

I always do cheese over the toppings, regardless of whether I use tomato sauce.

Usually my toppings are already cooked and I don't want them to cook too much more. Whereas the cheese needs to cook/melt.

But to be honest for some reason I never even thought of doing it another way. Perhaps I'll try cheese and then toppings tomorrow.
