This is a very interesting question!
I must admit I'm not a frequent self-maker of pizza simply because I trust my own pizza making skills far less than eating the delicious work of someone (or a place) that
does make wonderful pizza!
The few times I have attempted a simple home pizza, I simply proportioned the cheese over the sauce (then toppings last).
I know some of the deep pizzas I most enjoy in Chicago do the "cheese on top" routine so I know there's definitely different approaches and philosophies to the cheese placement. I guess as long as it results in deliciousness, all are good.
