Cacio Di Roma Cheese

AKA Cacio De Roma. This is a new one for us and a fortunate find. Bev has recently been found with a serious allegy to cow milk. She doesn't do too well with goat stuff either. But sheep things seem fine. We have therefore been grating Romano for our pasta. Found a hunk of the Cacio in the back of fridge that had been picked up at Whole Foods back in November. It was in pretty bad shape and I was going to chuck it when I noticed that it was also a sheep cheese. So I salvaged what I could of it and shredded it for a cheese omlette last Saturday morning. Fantastic. We just love this little cheese from Lazio.

Are there any other fans out there?

I've never purchased this cheese but have had it as part of a pasta dish in Rome - cacio e pepe.
