Smoked some of the trout from my folks for appetizer for Easter Dinner. Wish that I'd had some apple wood to use but alas, there's no orchard close since we've moved, so I just used hickory. Fairly short smoke, I didn't want to overpower anyone. Just finished with a bit of salt before putting it on the rack. Got high marks from the in-laws. What was surprisingly good with it was this white cheddar I found at the store that had chunks of blueberries in it. Really nice flavor combo.
