Leftover rice?

I frequently have some rice left over whenever I make it. Invariably I use it to make fried rice, which makes a nice lunch the next day. What do you like to do with leftover rice?

**I ate at a Mexican-Chinese restaurant and had the refried rice.

**I ate at a German-Chinese restaurant and a half-hour later was hungry for power.

da-dum-dah. >cymbal<

I use a variety of rices: long grain, medium grain , short grain, Basmati, jasmine, wild rice (I know, it's not really rice), red rice, etc. So, what's some of your faves?

Good idea. They are one of my only dishes (probably the only one) that I cook in a microwave.

I mix some browned ground beef with leftover rice and tomato sauce and fill a hollowed out green pepper. A piece of cheese on top to act like a cap and then zap 5-6 minutes. Easy and good.

Larry, one of my favorite things to do with rice is to fry two large eggs over easy, for breakfast the morning after. The rice with the over-easy and add a little low salt soy sauce, some broiler toast with lots of butter and you have a nice breakfast.

Well, you take whatever vegetables you have in the fridge (onions, celery, carrots, squash, whatever), give them a quick saute in the oil of your choice with some garlic and some chili flakes, throw in the rice, fry for a few minutes more, then take it off the flame and add a tablespoon or two (or three) of peanut butter. Mix it all up until the peanut butter has melted in and coated everything, and serve.

This could probably be refined further but I learned the recipe from my first-ever serious girlfriend many years ago and I've never taken it beyond this.

I'll definitely have to try that. I do like peanut sauce, so there's a good chance I'll like it.

We'll often make Spanish Rice with our left-overs.

BTW...I recommend using a rice cooker instead of stove top rice cooking. The product is always consistant and you can even use the removable container as storage for your left-over rice.
