RCP: Easy Jalapeno-Cucumber Pickle Chips

by Jenise » Thu Mar 25, 2010 2:14 pm

A neighbor of mine who is a great cook brought me a jar of pickles the other day. I emailed him yesterday to let him know that these are like vegetable crack for a chile-head, pickle-head like myself. I ate half the jar at the first sitting. He wrote back to describe his method, thought I'd share:

The pickle recipe is a very easy one that I got from a woman that lives in the south and I modified it. Basically you take 1 qt or pickled jalapenos (costco) and 1 qt of dill pickle chips. Pour into a non reactive bowl. Add 1 1/2 -2 cups sugar, 1/4 cup pickling spice, 1 t tumeric. Cover and let sit out for several hours and overnight in the refer for several days. Prepare jars for waterbath processing (15 mins ) Drain, saving the pickle juice. Add 1/2 cup white vinegar to the juice and heat to boiling. Distribute the pickles in jars. Pour boiling juice over pickles to 1/4 in. form to, cap and process... Let sit for about 2 weeks for the best flavor... OR if you eat them right away you don't have to process them...
My wine shopping and I have never had a problem. Just a perpetual race between the bankruptcy court and Hell.--Rogov
