RCP: Lemon Souffle Pancakes

Haven't tried these, but the recipe came with my new Seattle PBS station newsletter credited to a Chef Bob McCool of I know not where, and I think it sounds heavenly. Bill Spencer, where are you! "Light-as-a-cloud pancakes start the day off right."


LEMON SOUFFLE PANCAKES

Ingredients:
2 cups cottage cheese
6 large eggs, separated
2 lemons (zest and juice)
1 cup flour
1 1/2 tablespoons baking powder
3/4 teaspoon salt
2 tablespoons canola oil
Preparation

Mix together flour, baking powder and salt; set aside.

Combine the cottage cheese. egg yolks, lemon juice and zest in a blender. Mix until smooth and stir into dry mixture.

Beat egg whites until stiff and fold into pancake mixture.

Ladle batter on a medium-hot oiled griddle for 2 to 3 minutes per side, using a cast iron skillet or griddle. Use a thin spatula for flipping these delicate pancakes.

Serve with fresh blackberries or frozen blueberries that have been thickened with a bit of cornstarch so they aren’t runny. Delicious as is, or top with your favorite topping.

Serves 3 (nine 5-inch cakes)

These sound awful. I cannot imagine lemon in my pancakes or cottage cheese...(I thought you hated cottage cheese!) I want my pancakes to be a comfort food, made the usual way, with maple syrup. That being said, I never eat pancakes anymore because they settle like a rock in my gut. I do serve them to our grandchildren, with coconut syrup, which they love, or pure maple, grade B syrup. Somebody out there wants to ruin pancakes... :evil:
Oh, I keep homemade pancakes in the freezer for my beloved, no lemon juice or cottage cheese!

Yep, you lost me at cottage cheese. Use fresh ricotta and it will be superior.

Like Karen, I don't eat pancakes as they always make me feel like I've eaten a brick. That said, lightening them up might be just the ticket (with cottage cheese or ricotta, either one).

Actually, my very first memory involves pancakes. We were on vacation, camping in San Francisco within site of the Bay Bridge, something you could do back then. I was 11 months old and they were feeding me my first pancake, and the smell of the maple syrup made me want to hurl. Never cared much for them since, and my interest is only piqued when it's something different. Like these--picture the flavors of lemon cheesecake hot off the griddle. Sounds good to me! (Oh, and I do like cottage cheese--the taste of it, anyway, I just find cottage cheeses to be wetter/creamier these days, which I find disturbing, than they used to be. But a scoop of a good dry cottage cheese served with chopped tomatoes, salt and pepper, kind of like a caprese salad? Wonderful!)

Lemon is one of my very favorites to use with foods. I go through a lot of fresh lemon every week, almost as much as garlic. :D I can't say that I think of lemon as being comforting, more like invigorating, and refreshing.

I don't see any conflict in these terms.

But, I guess the point is that once we develop strong associations with certain dishes (i.e. maple syrup and pancakes in your case) it can be hard to make changes!

I'm sure you're right. It's comfort food and there's a sacred way it's "supposed to be". No messin'. :)
