Low Fat Microwave Potato Crisps

Inspired by a post on a friend's blog, we've been making potato chips (crisps) in the microwave. They're easy to make, low fat and quite un-evil.

1. Thinly slice the potatoes with a mandoline. We scrubbed them first and left the skins on.

2. Rub a little olive oil on the slices. You could also make them completely oil-free, but I think they're a little nicer with a bit of oil.

3. Lay them out on a sheet of parchment paper, sized to fit your microwave turntable. Try and fill up the whole sheet.

4. Heat them on high for three minutes, then check them. Then heat them in 1 min increments, checking all the time, as they can burn in a flash.

5. Remove from micro (we use our pizza peel to get the sheet out) and let them crisp up for a few minutes, then salt them as desired. Enjoy!

PS. The time they take to cook depends on your microwave wattage as well as the number you cook at the one time. So cooking just a few slices might take less than 3 minutes - please use your judgment!

Those look insanely good, Celia. Only trouble I can imagine having is that one would probably eat all of batch #1 in the time it takes to cook batch #2. Could be up to batch #5 or something before anybody else gets any. :)

My friend did on her blog, but I just used white sebagoes. We don't actually get red potatoes here, just pink ones!

I tried the microwave potato crisps today...very nice. The parchment paper is the best way to go. I tried them first in a glass pie plate with a little OO rubbed over the bottom and they stuck. I dipped a few in apple cider vinegar then added salt. Some had rosemary and salt. All were brushed on both sides with a wee bit of OO. I used a silicon basting brush, they make a little oil go a long way. Yum!

Karen, glad you enjoyed them. Dale, we found that if you use parchment paper and put it straight on the micro turntable, you don't need to flip them. I think the flipping is just to stop them sticking to the plate.

Made these tonight. I set the mandoline at 1 mm which gave a thin slice that got very crisp. I did not have parchment paper so I did the Two Minutes Flip Two Minutes More dance. It was definitely easier to do the second and subsequent platefuls than the first. Finished with plain table salt.
