....I can't find a decent 'essence injector'.

I've always been content to marinate by placing a piece of meat into a container with marinade, maybe poking a few holes in the meat to hopefully allow ingress for the marinade.

I happened across a recipe for marinated brisket I want to try and it requires an 'essence' injector (no rude remarks from the boys, please).

Never one to pass up a chace to buy a new gadget, I tried to find such a thing and aside from numerous things passing as miracle marinators, there is a vast array of enlarged hypodermic devices that I probably wouldn't want to have on the seat beside me when I went through a road block.

Does anyone have a favourite brand? There seems to be a lot of crap out there (as in everything, sigh). I only want to buy one of these, and I'd like it to still function 2 years from now when I next reach for it.

Am I correct in assuming that the stainless steel sort that looks like it might be wielded by Nurse Ratched is the best (always assuming they use seals of decent and durable material)? What do professional chefs use?

I bought a plastic injector recently at a supermarket, but I haven't tried it yet. So no report.

Sorry, no help. I've never used injection. And for a meat as thin as brisket (though yes it's dense), I would think it unneccessary. I wouldn't buy any special tools, I'd just marinate it for 24 hours (in a ziploc bag, so that the marinade contact is universal to all exterior surfaces).

I may just try regular marination to see if I like the recipe. Wouldn't want to pass up a new tool, though.....
